It's a bit tough not knowing how long your hair is, or if you're going to get it done professionally. The big thing in any ballroom competition is to make sure your hair is secure - pinned, sprayed, glued - whatevered - to ensure it doesn't come apart part way through. For the waltz, your hair could be smoothed back into a classic bun, it could be in curls (carefully pinned up - think updo), and could be down (think Shannon's Vienesse Waltz on DWTS). For mambo, I think anything BUT a curly updo would work. I'll see if I can find some good photos.
Here are some pics: http://wedlog.instablogs.com/images/bridal_hairstyles_c2.jpg (Although this is a detailed bun, a simple one is just as good. The nice thing here is that your hair is off your face and not in your way) http://images.google.ca/imgres?imgurl=http://hairstyles.nexxus.com/images/hairstyles-main-girl1.jpg&imgrefurl=http://hairstyles.nexxus.com/forms/quick-signup-duplicate.cfm&h=438&w=325&sz=35&hl=en&start=144&um =1&tbnid=iquHKkU6LwFmuM:&tbnh=127&tbnw=94&prev=/images%3Fq%3Dhairstyles%26start%3D140%26ndsp%3D20% 26um%3D1%26hl%3Den%26safe%3Doff%26sa%3DN (This is a really long link, but includes how-to for a very nice look, if you have long hair). Good luck!

Traditionally at ballroom comps women wear their hair in a bun but many competitors create their own 'look' by doing different variations on it.
Go on dancesport info or dancesport photo.net or dancesport UK and look at the different ways women wear their hair. Personally I do a plain bun because my costumes are quite flashy and detailed so I dont want to look too messy and over detailed, if im competing in a big comp then I might use glitter hairspray Seeing youre doing the viennese i think you should definetly wear it up because in the viennese you are turning a lot and you want to make sure you can see, instead of having long hair flying around and covering your face Good luck!!!!
