Default Hosting my own web server- which Linux to use?

I'm thinking Ubuntu, but then it comes down to server or desktop edition. Can I still perform desktop activities on the server edition? Can I run an Apache server on the desktop edition?
Yes, I know what I'm doing and have some experience.

linux is sure a good thing. but are you sure you know how to install and know what you are doing? even on windows XP its a task and a half to setup apache, php, mysql, asp etc!
